As I try to improve my Spanish skills, I find that having both the audio and subtitles for my DVD movie collection easily available is helpful. The easiest and most accurate way to pull multiple audio tracks and multiple subtitles out of a DVD is with avidemux.

Here’s an excellent guide for converting DVD-based subtitles into SRT files.

After I have all the SRT subtiles, I like to shove them into an MKV container with the video file. MKV containers can easily have lots of lots of different subtitles and many different audio tracks without the waste of DVD encoding (between 50-75% larger). That means instead of a 8GB DVD on your network, you can have the video and multiple audio and multiple subtitles in a 1.5-2GB single MKV file with hardly any noticeable quality loss.

Most importantly, avidemux runs on the big 3 platforms; Linux, Windows, and OSX. It is really an impressive tool for video conversion, editing and … I’ve just learned … subtitle conversion.

After following the instructions in the link above, I was impressed with the quality of the created subtitle files. The resulting .srt files are as good or better than those found elsewhere. For the trivial amount of effort it requires, I’ll be creating my own subtitles going forward. And of course, I’ll be using Linux to do it.
